Our campuses close on Friday 20th December and re-open on Thursday 2nd January 2025 for the Christmas Break.

Students will return to timetabled lessons on Monday 6th January 2025.

Tom Booton hosts dinner service

Last night, Michelin-starred chef Tom Booton hosted an exclusive dinner service at the Balkerne restaurant, located at Colchester Institute’s Colchester Campus.  

Tom Booton is currently head chef of The Grill at the Dorchester in London. Tom was born and raised in Essex, at 15 he developed his passion for cooking whilst doing work experience at Le Talbooth in Dedham, where his passion for cooking was ignited. Being a head chef at the Westbury at the tender age of 24, considered a significate achievement, he now inspires the future generation of chefs.

The evening consisted of a 7-course taster menu, designed by Tom showcased his innovative approach to modern cuisine. Tom was supported by previous Colchester Institute student and chef at the Grill at the Dorchester, Sophie O’Keefe and Colchester Institute catering staff and students. 

Colchester Institute Level 3 Professional Chef students worked in the Kitchen to prepare, cook and serve the food, giving them an excellent opportunity to learn from one of the industry’s top chefs. The chefs were supported by Level 2 and 3 Hospitality students to serve members of the public their food and drinks at the Balkerne Restaurant. 

Tom Booton, head chef of The Grill at The Dorchester said, “It’s nice to be back in Colchester and inspire the next generation of chefs. I look forward to working with Colchester Institute students again in the future.”  

Sophie O’Keeffe, Colchester Institute alumna and chef at The Grill at The Dorchester, said, “During my time at the College, I made great connections in the industry and I was fortunate enough to gain some work experience with Tom after his visit to the College. I was so inspired and excited to work with him at The Dorchester.”   

For anyone interested in dining at the College restaurant with food prepared and served by inspiring chefs and hospitality students, the Balkerne Restaurant is open term time for lunch on Wednesday – Friday and Tuesday and Thursday for dinner.
